Vegetable Puff Recipe ( Using Puff Pastry )

VEGETABLE PUFF RECIPE ( USING PUFF PASTRY) 
Vegetable Puff Recipe (Indian Curry Puff) is crispy, buttery and flakey in every bite and stuffed with a delicious vegetable curry filling For stuffing, that’s your wish use any kind of vegetables like potato-carrots-peas or eggs or chicken or paneer.

So let's see the preparation of the Vegetable Puff Recipe (Indian Curry Puff)

Preparation time: 35 min
Serves – 4

Ingredients
1 Packet Puff Pastry Sheets 

Vegetable Filling :
3 Tbsp Oil
1 Medium Onion - thinly chopped
1 Medium Chopped Tomato 
1/2 Cup Peas - frozen or fresh
1/2 Cup Carrots - thinly chopped in square size
1/2 Cup Carrot - thinly chopped
1/2 Cup Green Capsicum & Red Capsicum - thinly chopped
2 Medium Boiled Potatoes - thinly chopped
2 Tbsp Fresh Coriander leaves
1 Tsp Cumin powder
1 Tsp Red Chilli Powder
1 Tsp Dry Mango powder
1 Tsp Ginger Garlic paste
1 Tsp Lemon Juice
Salt as required

Instructions :

ü Heat a non-stick pan and add oil.
ü Now add cumin powder, onions and saute till onions turn golden brown (takes 2-3 minutes) then add the ginger garlic paste and tomatoes
ü Add all the other vegetables except potatoes and saute for a minute.
ü Cover the vegetables and let them cook for 7 minutes on low heat. (saute every 2 minutes).
ü Finally add the boiled potatoes, curry powder, dry mango powder, cumin powder , saute everything together and cook for another 2 minutes.
ü add lemon juice and turn off the heat and cool the mixture slightly.
ü Preheat the oven at 350f
ü Take the thawed but cold Puff Pastry Sheets and cut them into squares
ü Add 1tbsp of filling in the center and fold the remaining side over it. Brush each wrapped pastry.

ü Bake for 15-20 mins, until golden brown in colour.
ü Serve hot with tomato sauce/ketchup/chilli sauce.
