Pineapple Kesari Recipe

PINEAPPLE KESARI RECIPE 
Pineapple kesari is a popular sweet made in South India, especially in marriages and functions. With just rava/ semolina/ sooji and pineapple, sugar and ghee as main ingredients, this sweet is ready in minutes. Very easy to prepare but the taste and flavour is mind blowing.

Serves – 4

Ingredients needed

Rava-sooji -1/2 cup
Sugar-1 cup
Ghee-clarified butter -1/2 cup
Water -1 1/2 cup
Pineapple -chopped -1/2 cup
Cashew nuts- 10
Cardamom powder -4-5 powdered
Yellow food color or kesari color - 2 drops or a pinch

Preparation : 
ü Dry roast rava slightly until it is hot to touch.
ü Heat a tsp of oil and fry cashew nuts on low heat until golden brown.
ü Cut pineapple, discard the skin and core. Chop the pineapple flesh into small cubes and add sugar keep it aside.
ü Add the pineapple and 1 1/2 cup of water to boil, add a pinch of food color or kesari powder in it.
ü Now add the boiling water to the rava, stirring continuously. Cook the rava on medium flame.
ü Once all the water has evaporated, add sugar. When you add sugar, the mixture will turn watery again.
ü Cook the rava well on medium or low flame.
ü When it starts leaving the sides of the pan add fried cashew nuts, cardamom powder and switch off the heat.
